Laurent Fusi est originaire de Thonon-les-Bains et présente un parcours atypique. Après avoir dirigé une radio locale pendant plus de six ans, il décide de partir quelques temps à l’étranger (Canada, Maroc) pour finalement revenir aux sources !

Laurent redonne vie et ressuscite « La brasserie du Général », la plus vieille brasserie de la ville, dédiée au Général Dessaix dont la statue trône sur la place face au restaurant…

Laurent Fusi, en plus de ses activités de restaurateur, développe parallèlement des projets immobiliers et une structure de e-commerce. Il a à cœur de faire la promotion de sa ville d’origine et de sa région à laquelle il est particulièrement attaché. Souvent, lors de ses divers voyages à l’étranger mais aussi, occasionnellement, en tant que «guide bénévole» de Thonon-les-Bains…

Laurent et son équipe proposent tout au long de l’année, au sein de la brasserie, des animations gratuites (concerts, expos, dégustations…). Il met en avant certaines associations et artistes locaux. Aussi, il valorise les produits locaux.

Il participe pleinement au développement touristique de la région. Laurent se distingue surtout pour ses actions de communication et sa présence sur place, au quotidien.

I was born in January 1993 in the Neuchâtel region. In 2006, I had the opportunity to move to the beautiful Thonon region, where I continued my education and discovered my true passion for cooking.

It all began when I was initially drawn to the world of cinema. However, in 2015, I decided to follow my instincts and redirect my focus towards gastronomy. At the age of 22, I resumed my studies with determination, joining the CFA de Groisy to pursue my CAP Cuisine in an apprenticeship program. I had the privilege of validating my skills and obtaining my diploma in 2017.

My thirst for learning and progressing did not fade after obtaining my diploma. I had the opportunity to work alongside a compassionate mentor, where I gained valuable experience during two rewarding years.

In May 2021, I had the opportunity to join the kitchens of the General. In a short amount of time, my passion and commitment allowed me to climb the ranks. In February 2022, I was promoted to the position of sous chef. Finally, in April 2024, I was honored to become the head chef, a role that combines my passion and determination to provide a culinary experience for our customers.

Carmen Messina is an experienced professional in the fields of catering and administrative management. With over 8 years of experience, she has held key positions in various companies, including as a headwaiter and administrative manager of a prestigious gourmet restaurant in Paris.

Carmen handles all administrative tasks management. Her rigor and organizational skills allow her to successfully carry out these missions with efficiency.

Endowed with great professionalism, Carmen is also recognized for her ability to work in a team and collaborate with different departments within the company. Her versatility and mastery of computer tools make her a valuable resource for ensuring smooth and effective administrative management.

As the administrative manager of the group, Carmen is committed to bringing her expertise and determination to support the company's development and ensure optimal administrative organization.
